VORAZ is a gastro-pub where shareable dishes incorporate traditional Mexican ingredients and techniques with a contemporary approach. The experience strikes a balance between casual and refined, beginning at the bar and extending to every corner of the space.
Fire, grills, and open flames are at the heart of an ever-evolving kitchen, bringing a distinctive character to each dish through its flavors, textures, and fresh combinations. Inspired by tradition and the transformation of Mexican gastronomy, VORAZ offers a deeply rooted concept with authentic honesty.

Emiliano Padilla is a multidisciplinary artist based in Mexico City, focused on music and gastronomy. His work is deeply influenced by his experience in renowned Michelin-starred restaurants worldwide, such as Noma 2.0 in Copenhagen, Pujol in CDMX, Ryugin in Tokyo, Fäviken in Sweden, and The Breslin in New York, among others. Emiliano creates dishes where technique and creativity come together, bringing to life concepts with a unique essence. Inspired by Mexican ingredients and contemporary techniques, he reinterprets and honors traditional cuisine in his creations.

Located at the corner of Aguascalientes and Manzanillo in Mexico City's Roma Sur neighborhood, Voraz fuses tradition and modernity in a unique setting: a historic workshop over 60 years old. Preserving original elements to honor its history, the design maintains its brutalist and utilitarian spirit within a contemporary, sophisticated atmosphere. By intertwining past and present, Voraz provides an experience that comes to life through the constant evolution of its cuisine
